How to cook it

Heat the oven to 375F and cook the manicotti shells until just pliable, then drain and cool.

Warm the olive oil, cook the garlic until fragrant, add the crushed tomatoes and half the basil, season with salt, and simmer 15 minutes.

Wilt the spinach, chop it, and squeeze it dry.

Mix the ricotta, egg, half the parmesan, the spinach, and the remaining basil.

Spread a layer of sauce in a baking dish, then pipe or spoon the ricotta filling into each shell and arrange them over the sauce.

Top with the remaining sauce, mozzarella, and parmesan.
