How to cook it

Heat the oven to 425F and spread a thin layer of marinara in a baking dish.

Halve each chicken breast horizontally and pound to an even thickness, then season with salt.

Set up three shallow bowls with flour, beaten eggs, and the breadcrumbs mixed with half the parmesan.

Dredge each cutlet in flour, then egg, then the breadcrumb mixture, pressing so the coating sticks.

Heat the olive oil in a skillet over medium-high and fry the cutlets until golden, about 3 minutes per side, then lay them in the baking dish.

Top each cutlet with marinara, mozzarella, and the remaining parmesan.

Bake until the cheese bubbles and the chicken reaches 165F, about 18 minutes.

Scatter fresh basil over the top and serve.
