How to cook it

Soak the cashews and poppy seeds in a little hot water for 15 minutes, then blend to a smooth paste.

Whisk the yogurt smooth and marinate the chicken in it with the ginger garlic paste for 20 minutes.

Heat the ghee in a heavy pot and temper with the bay leaf, cardamom, cinnamon and cloves until fragrant.

Add the sliced onion and fry gently until soft and pale gold, about 8 minutes, taking care it does not brown deeply, since a rezala stays white.

Add the marinated chicken and sear 6 minutes, turning the pieces, until they lose their raw colour.

Stir in the cashew-poppy paste, sugar and salt, add the water, cover and simmer 20 minutes until the chicken is tender and the gravy is thick and pale.

Add most of the whole green chilies and the garam masala, simmer 3 minutes more, and serve hot with pulao or roti.
