How to cook it

  1. Mix the bajra flour with the salt in a bowl.

  2. Gradually add warm water, kneading firmly with your hands, this dough doesn't hold together like wheat dough so work quickly before it dries out.

  3. Divide the dough into 8 balls and keep them covered with a damp cloth.

  4. Pat each ball out directly on a piece of parchment or between wet palms into a thick round about 5 to 6 inches wide, bajra dough can't easily be rolled with a pin.

  5. Carefully transfer to a hot tawa, cook on medium heat, sprinkling a few drops of water on top and flipping once the underside firms up.

  6. Cook both sides until light brown spots appear and the bhakri is cooked through, pressing gently with a cloth to help it puff.

  7. Serve hot with a smear of ghee, alongside shaak and chaas.
