How to cook it

Bring a large pot of salted water to a boil and cook the penne until al dente, reserving a cup of pasta water.

Heat the olive oil and butter in a large skillet and cook the carrot, bell pepper, and asparagus until crisp-tender, about 5 minutes.

Add the zucchini, peas, and garlic and cook 3 minutes more.

Stir in the cherry tomatoes until they begin to burst.

Pour in the cream and parmesan and simmer briefly to make a light sauce.

Add the drained pasta and toss, loosening with pasta water as needed.
