How to cook it

Cook the linguine in salted water until al dente, about 10 minutes; reserve 1/2 cup pasta water, then drain.

Melt 2 tbsp butter with the olive oil in a large skillet over medium heat and cook the garlic and red pepper flakes 1 minute.

Add the shrimp and cook until pink, about 3 minutes, then remove.

Pour in the wine and lemon juice and simmer 2 minutes, then whisk in the remaining butter.

Return the shrimp, add the pasta and a splash of pasta water, and toss to coat.

Finish with parsley and parmesan and serve.
