  1. Blend the shallots, garlic, red chilies, and turmeric into a paste.

  2. Cut the chicken into bite-size pieces.

  3. Heat the oil in a wide pot and fry the paste until fragrant, about 3 minutes.

  4. Add the chicken and sear lightly, then add the chopped tomato, water, and salt and bring to a simmer.

  5. Cover and cook until the chicken is tender, about 20 minutes.

  6. Uncover and stir in the lemon basil and green onion, and simmer 2 minutes more until the herbs wilt.

  7. Finish with the lime juice and serve hot alongside rice.
