How to cook it

  1. Soak the salt cod in cold water for 24 to 36 hours, changing the water two or three times, then drain, flake it into large pieces, and discard any bones.

  2. Soak the dried choricero peppers in warm water for 30 minutes until soft, then scrape the flesh from the skins with a spoon and discard the skins.

  3. Heat the olive oil in a wide pan and cook the chopped onion and garlic over low heat for about 20 minutes, stirring often, until deeply softened and sweet.

  4. Stir in the chopped tomato, the scraped pepper flesh, the paprika, and the bay leaf, and simmer for 15 minutes until the sauce turns a deep red and thickens.

  5. Blend the sauce until smooth, return it to the pan, nestle in the flaked cod, and simmer gently for 8 to 10 minutes so the fish warms through without breaking apart.

  6. Taste before adding any salt since the cod already carries its own, fish out the bay leaf, and ladle the cod and its sauce into shallow bowls.
