How to cook it

  1. Whisk the orange juice, lime juice, minced garlic, cumin, chili powder, olive oil, and salt into a marinade.

  2. Add the flank steak, turn to coat, and let it marinate at room temperature for 30 minutes.

  3. Heat a grill or grill pan over high heat and cook the steak until well charred and medium, about 5 minutes per side.

  4. Rest the steak for 5 minutes, then slice thinly against the grain and chop into bite-size pieces.

  5. Warm the corn tortillas on the grill until soft and pliable, about 30 seconds per side.

  6. Fill the tortillas with steak and top with finely diced onion and plenty of cilantro, serving lime wedges alongside.
