How to cook it

  1. Rub the prawns with a little turmeric and salt and set aside.

  2. Heat the ghee in a wide pan and temper with the cinnamon, cardamom, cloves and bay leaf until fragrant.

  3. Add the sliced onion and fry gently until soft and translucent, about 6 minutes, without letting it brown, then stir in the ginger paste.

  4. Add the remaining turmeric and the prawns, and sear 3 minutes on each side until they just turn pink, then lift them out onto a plate.

  5. Pour the coconut milk and water into the same pan, add the sugar and salt, and simmer 6 minutes until it thickens slightly.

  6. Slide the prawns back in with the slit green chilies and simmer 4 minutes more, just until the prawns are cooked through; do not let them overcook or they turn rubbery.

  7. Serve hot with steamed rice.
