How to cook it

  1. Rinse the masoor dal and chop the tomato.

  2. Combine the dal, turmeric, tomato, and water in a pot and bring to a boil.

  3. Skim off any foam, reduce to a simmer, and cook until the dal is soft and starting to break down, about 20 minutes.

  4. Heat the oil in a small pan over medium heat and fry the mustard seeds until they pop, about 30 seconds.

  5. Add the curry leaves and fry 15 seconds more, until fragrant.

  6. Pour the tempering into the dal along with the coconut milk and salt, and simmer 5 minutes more.

  7. Serve hot alongside rice.
