How to cook it

  1. Toast the dry fideos in the oil over medium heat, stirring constantly, until golden brown, about 3 minutes.

  2. Blend the tomato, onion, and chipotle pepper into a smooth puree.

  3. Pour the puree into the toasted noodles and cook 2 minutes until it darkens.

  4. Add the water and salt, bring to a simmer, then cook uncovered, stirring occasionally, until the liquid is fully absorbed, about 12 minutes.
