How to cook it

  1. Warm the vegetable broth in a saucepan and keep it at a bare simmer.

  2. Heat the olive oil in a wide pot and cook the sliced mushrooms until browned, about 8 minutes, then set half aside.

  3. Melt 1 tbsp butter with the onion and garlic and cook until soft, about 4 minutes.

  4. Add the rice and thyme and stir until the grains turn translucent at the edges.

  5. Add the warm broth a ladle at a time, stirring until absorbed, until the rice is creamy and tender, about 20 minutes.

  6. Stir in the remaining butter, parmesan, and the reserved mushrooms.

  7. Season with salt, top with parsley, and serve.
