How to cook it

  1. Dice the guanciale and cook it in a dry skillet over medium heat until crisp and golden, about 6 minutes, then set the pan off the heat.

  2. Bring a large pot of salted water to a boil and cook the rigatoni until al dente.

  3. Drain the pasta, reserving a cup of pasta water, and add it to the skillet with the guanciale and its fat.

  4. Toss off the heat, adding pasta water and the pecorino a little at a time, until the sauce turns glossy and creamy.

  5. Finish with plenty of cracked black pepper and serve hot.
