How to cook it

  1. Soak the dried salt cod in cold water for 24 to 36 hours, changing the water two or three times, then drain and flake it into large pieces, discarding any skin or bones.

  2. Heat the olive oil in a wide pot and cook the chopped onion and garlic until soft, about 6 minutes, then stir in the chopped tomato, the cumin, the paprika, and the crushed saffron and cook until fragrant.

  3. Add the chickpeas, the diced potato, the bay leaf, and enough water to just cover everything, and simmer for 20 minutes until the potato is tender.

  4. Nestle the flaked cod into the pot and simmer gently for 8 to 10 minutes so it stays tender rather than falling apart.

  5. Stir in the spinach in batches until wilted, taste before adding the salt since the cod already carries its own, and fish out the bay leaf.

  6. Ladle into bowls and top each with a few wedges of the hard-boiled egg, the traditional way this potaje is served during Lent, when meat is set aside.
