How to cook it

  1. Heat the olive oil in a nonstick skillet over medium heat and cook the zucchini and onion, stirring occasionally, for 12 to 15 minutes, until soft and lightly golden.

  2. Beat the eggs in a large bowl, season with the salt and pepper, and stir in the softened zucchini and onion.

  3. Wipe out the skillet, add a little more oil, and pour in the egg mixture, spreading it evenly, then cook over medium-low heat for 5 to 6 minutes, until the edges set and the bottom is golden.

  4. Slide the tortilla onto a large plate, invert the skillet over it, and flip both together so the tortilla drops back in raw side down.

  5. Cook for 3 to 4 minutes more, until just set in the center, and slide onto a plate to serve warm or at room temperature; the lighter summer version of the potato tortilla, a different vegetable and its own name.
