Ingredients
The quantities follow this count.
How to cook it
-
Pound the chicken cutlets thin and season them lightly with salt.
-
Lay two sage leaves on each cutlet, drape with prosciutto and press so it adheres, then dust the underside with flour.
-
Heat the olive oil and 1 tbsp butter in a skillet over medium-high and cook the cutlets prosciutto-side down until crisp, about 3 minutes, then flip and cook 2 minutes more, and set aside.
-
Pour the chicken broth and lemon juice into the pan and simmer, scraping up the browned bits, until reduced by half.
-
Swirl in the remaining butter to make a glossy sauce.
-
Return the cutlets to warm through and spoon the sauce over to serve.

When to cook it
Chicken Saltimbocca takes about 30 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
