How to cook it

  1. Dissolve the achiote paste in the juice of the oranges and limes, which stand in for the traditional sour orange, along with the garlic and salt.

  2. Rub the pork shoulder all over with the achiote marinade and let it sit at least 1 hour, or overnight in the fridge.

  3. Line a deep baking dish with the banana leaf, add the pork and its marinade, top with sliced onion, and fold the leaf over to seal.

  4. Cover tightly and cook low and slow, in a 300F oven or a slow cooker, for about 3 hours until the pork shreds with a fork.

  5. Shred the meat in its own juices and serve with warm tortillas and pickled red onion. A weekend dish, and the strongest single southern marker on this shelf.
