How to cook it

  1. Blend the shallots, garlic, red chilies, and turmeric into a smooth paste with a splash of water.

  2. Heat the oil in a heavy pot and fry the paste with the galangal, bruised lemongrass, and salam leaves until fragrant, about 4 minutes.

  3. Add the chicken and turn to coat in the paste, searing lightly for 4 minutes.

  4. Pour in the coconut milk and salt and bring to a gentle simmer, stirring occasionally so it does not split.

  5. Reduce the heat and simmer, uncovered, stirring now and then, until the chicken is tender and the sauce has thickened slightly, about 30 minutes.

  6. Remove the whole spices, taste and adjust the salt, and serve hot alongside rice.
