How to cook it

  1. Blend the garlic with the turmeric, lime juice, and half the salt into a paste and rub it over the fish, marinating at least 15 minutes.

  2. Heat the oil in a wide skillet over medium-high heat and fry the fish until deeply golden and crisp on both sides, about 5 minutes per side, then drain.

  3. Blend the red chilies, shallots, and tomato into a coarse paste.

  4. Pour off all but 2 tbsp of the oil and fry the paste over medium heat, stirring often, until it darkens and the oil separates, about 8 minutes.

  5. Season with the remaining salt, then spoon the sambal generously over the fried fish.

  6. Serve hot alongside rice.
