How to cook it

  1. Dry roast the black sesame seeds in a small pan over low heat for 3 minutes until fragrant, then grind to a coarse, oily paste; this paste, rather than any chili, is what carries the flavour of a dohneiiong.

  2. Heat the mustard oil in a heavy pot until it just smokes, then let it cool slightly.

  3. Add the sliced onion, ginger, garlic and dried red chilies and fry 6 minutes until the onion softens and turns light gold.

  4. Add the pork and turmeric and sear over high heat 8 minutes, turning the pieces, until browned.

  5. Add the water and salt, bring to a boil, then cover and simmer 30 minutes, or pressure cook 15 minutes, until the pork is nearly tender.

  6. Stir in the black sesame paste and simmer uncovered 10 minutes, stirring now and then, until the gravy thickens and turns a deep, dark grey-brown.

  7. Serve hot with plain rice.
