How to cook it

  1. Heat the mustard oil in a pot until it just smokes, then let it cool slightly.

  2. Add the sliced onion, ginger and garlic and fry 6 minutes until softened and golden.

  3. Add the chicken and turmeric and sear over high heat 8 minutes, turning the pieces, until browned.

  4. Add the water, slit green chilies and salt, bring to a boil, then cover and simmer 20 minutes until the chicken is tender.

  5. Roughly tear the perilla leaves and stir them in for the final 3 minutes of cooking; their distinctive anise-like fragrance fades quickly, so they go in last, not with the aromatics.

  6. Serve hot with plain rice.
