Boil the egg noodles until just tender, then drain and toss with a little oil to keep them from sticking.

Slice the chicken thinly and blend or mince the garlic, shallots, and red chilies together.

Heat 1 tbsp oil in a wok and scramble the eggs until just set, then break them up and set aside.

Fold in the bean sprouts, scrambled egg, and scallions, and toss 1 minute more.
