How to cook it
-
Blend the shallots, garlic, cashews, coriander, and turmeric into a smooth paste with a splash of water.
-
Heat the oil in a heavy pot over medium heat and fry the paste with the galangal, bruised lemongrass, and bay leaves until fragrant, about 4 minutes.
-
Add the chicken and turn to coat in the paste, searing lightly for 4 minutes.
-
Pour in the coconut milk and salt and bring to a gentle simmer, stirring occasionally so it does not split.
-
Reduce the heat to low and simmer, uncovered, stirring now and then, until the chicken is very tender and the sauce has thickened slightly, about 30 minutes.
-
Taste and adjust the salt.
-
Remove the whole spices and serve hot over the jasmine rice.
