How to cook it

  1. Heat the oven to 425F and toss the sliced zucchini, bell pepper, eggplant, and red onion with the olive oil and salt.

  2. Roast on a sheet pan until tender and browned, about 20 minutes.

  3. Split the ciabatta rolls and spread pesto on the cut sides.

  4. Layer the roasted vegetables and sliced mozzarella onto the rolls and drizzle with balsamic glaze.
