How to cook it

  1. Blend the turmeric, garlic, and shallots into a paste.

  2. Heat the oil in a large pot and fry the paste with the galangal, bruised lemongrass, and bay leaves until fragrant, about 3 minutes.

  3. Add the chicken and water, bring to a boil, then skim, cover, and simmer until the chicken is tender, about 25 minutes.

  4. Lift out the chicken, shred the meat off the bone, and return the shreds to the pot.

  5. Soak the rice vermicelli in hot water until soft, then drain and divide among bowls with the bean sprouts.

  6. Season the broth with salt, ladle it over the noodles and bean sprouts, and top with the shredded chicken, halved hard-boiled eggs, and scallions.

  7. Serve with lime wedges to squeeze in.
