Slice the tempeh into thin strips.

Heat the oil in a skillet over medium-high and fry the tempeh in batches until golden and crisp, about 3 minutes per side, then drain.

Pour off all but 2 tbsp of the oil and fry the sliced garlic, shallots, and red chilies until fragrant and lightly golden, about 3 minutes.

Stir in the kecap manis, tamarind paste, brown sugar, and salt and simmer until syrupy, about 2 minutes.

Toss the fried tempeh through the sauce until every piece is coated and glossy.
