Halve the chicken breasts horizontally, pound them thin, and season with salt.

Dredge the cutlets in flour, shaking off the excess.

Heat the olive oil and 1 tbsp butter in a skillet over medium-high and cook the cutlets until golden, about 3 minutes per side, then set aside.
