How to cook it
-
Heat the mustard oil in a heavy pot until it just smokes, then let it cool slightly.
-
Add the sliced onion, ginger and garlic and fry 5 minutes until softened and fragrant.
-
Add the pork and dried red chilies and sear over high heat 8 minutes, turning the pieces, until browned on all sides.
-
Crumble in the axone, breaking it up against the side of the pot; its sharp, savoury smell is strong raw but mellows completely once it cooks into the dish.
-
Add the turmeric and salt, then the water, and bring to a boil.
-
Cover and simmer 30 minutes, or pressure cook 15 minutes, until the pork is tender and the axone has melted into a thin, deeply savoury gravy.
-
Serve hot with plain rice.
