How to cook it

  1. Cut the potatoes into thin matchsticks, rinse well, and pat very dry.

  2. Heat the oil in a wok and deep-fry the potato matchsticks in batches until golden and crisp, about 5 minutes, then drain.

  3. Cut the tempeh into small cubes and fry in the same oil until golden, about 4 minutes, then drain.

  4. Blend the red chilies and shallots into a coarse paste.

  5. Pour off all but 2 tbsp of the oil and fry the paste with the galangal and salam leaves over medium heat until fragrant and darkened, about 6 minutes.

  6. Stir in the palm sugar and salt.

  7. Toss the fried potatoes and tempeh through the sambal until every piece is coated.

  8. Serve hot alongside rice.
