How to cook it

  1. Heat the oil in a skillet and fry the anchovies until crisp, about 3 minutes, then drain.

  2. Fry the raw peanuts in the same oil until golden, about 3 minutes, then drain.

  3. Blend or pound the shallots and red chilies into a coarse paste.

  4. Pour off all but 2 tbsp of the oil and fry the paste over medium heat until fragrant and darkened, about 6 minutes.

  5. Stir in the palm sugar and kecap manis and cook 1 minute more.

  6. Toss the fried anchovies and peanuts through the sambal until evenly coated.

  7. Cool and serve; keeps well in a sealed jar for up to a week.
