How to cook it

  1. Soak the sinki in warm water for 30 minutes to soften and rinse away some of its sharp, sour smell, then drain and chop coarsely.

  2. Heat the mustard oil in a pot and fry the sliced onion, ginger, garlic and dried red chilies for 5 minutes until fragrant.

  3. Add the pork and sear over high heat 8 minutes, turning the pieces, until browned.

  4. Add the chopped tomato and cook 4 minutes until it softens.

  5. Add the sinki, water and salt, and bring to a boil.

  6. Cover and simmer 35 minutes, or pressure cook 18 minutes, until the pork is tender and the stew has taken on the sinki's distinctive tang, closer to a sour soup than a thick curry.

  7. Serve hot with plain rice.
