How to cook it

  1. Blend the shallots and garlic into a paste, and bruise the lemongrass.

  2. Soak the rice vermicelli in hot water until pliable, about 8 minutes, then drain.

  3. Heat the oil in a large pot over medium heat and fry the paste, turmeric, and lemongrass until fragrant, about 4 minutes.

  4. Add the chicken and water, bring to a boil, then skim and reduce to a simmer.

  5. Cover and simmer until the chicken is fully cooked and tender, about 25 minutes.

  6. Lift out the chicken, shred the meat once cool enough to handle, and return it to the pot.

  7. Season the broth with the salt.

  8. Divide the drained vermicelli and bean sprouts among bowls and ladle the hot broth and chicken over top.
