How to cook it

  1. Soak the rice vermicelli in hot water until pliable, about 8 minutes, then drain well.

  2. Heat 1 tbsp oil in a wok and scramble the eggs until just set, then break them up and set aside.

  3. Heat the remaining oil in the wok over high heat and fry the garlic and shallots until fragrant, about 1 minute.

  4. Add the shrimp and stir-fry until just pink, about 2 minutes.

  5. Add the cabbage and stir-fry 2 minutes.

  6. Add the drained noodles, dark soy sauce, and light soy sauce, and toss gently over high heat until evenly colored, about 3 minutes.

  7. Fold in the bean sprouts and scrambled egg, and toss 1 minute more.

  8. Serve hot.
