How to cook it

  1. Mix the jowar flour, bajra flour, rice flour, and besan in a large bowl with the chopped onion, cilantro, ginger, green chilies, turmeric, chili powder, cumin seeds, and salt.

  2. Add a tablespoon of oil and enough warm water to bring the mixture into a soft, pliable dough.

  3. Divide the dough into 4 portions and pat each one out directly on a greased tawa or a wet piece of parchment into a thin round, poking a few holes in the center with your finger for even cooking.

  4. Drizzle oil around the edges and over the holes, cover, and cook on medium heat until the bottom is golden, about 5 minutes.

  5. Flip carefully and cook the other side uncovered until crisp and browned in spots.

  6. Serve hot with a squeeze of lime and your favorite pickle on the side.
