How to cook it

  1. Brown the ground beef with the onion, garlic, cumin, chili powder, and salt until cooked through.

  2. Spread refried beans down the center of each tortilla, then top with beef and cheddar.

  3. Fold in the sides and roll each tortilla tightly into a sealed packet, securing the seam.

  4. Heat the oil in a deep skillet to 350F.

  5. Fry the chimichangas seam-side down first, turning, until golden and crisp all over, about 4 minutes, then drain.

  6. Serve topped with salsa and sour cream.
