How to cook it

Heat the oven to 375F and spread a thin layer of enchilada sauce in a baking dish.

Heat the olive oil in a skillet and brown the ground beef with the onion, garlic, cumin, chili powder, and salt, about 8 minutes.

Warm the corn tortillas briefly so they roll without cracking.

Fill each tortilla with beef and a little cheese, roll up, and set seam-side down in the dish.

Pour the remaining sauce over the top and scatter with the rest of the cheese.

Bake until bubbling and the cheese is melted, about 20 minutes, then serve with sour cream.
