How to cook it

Season the beef with salt and pepper and toss with the flour to coat lightly.

Heat the oil in a Dutch oven over medium-high heat and brown the beef in batches, about 6 minutes, then remove.

Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes, then stir in the cumin and chili powder.

Return the beef to the pot, add the beef broth and diced tomatoes, and bring to a simmer.
