How to cook it

Simmer the beef chuck in 8 cups of water with the bay leaf for 1 hour until tender, then lift out, shred, and reserve the broth.

Grate the beets and carrot and saute in the oil with the diced onion for 8 minutes until softened.

Stir in the tomato paste and cook 2 minutes more.

Add the beet mixture, chunked potatoes, and shredded cabbage to the reserved broth and simmer 20 minutes.

Return the beef, stir in the minced garlic, and season with salt and pepper.
