  1. Cut the tomatoes into wedges.

  2. Beat the eggs with a pinch of the salt until smooth.

  3. Heat half the oil in a wok over medium-high heat, pour in the eggs, and scramble gently until just set into soft curds, about 1 minute, then remove to a plate.

  4. Add the remaining oil to the wok and add the tomato wedges, sugar, and remaining salt.

  5. Cook, stirring, until the tomatoes soften and release their juices into a light sauce, about 4 minutes.

  6. Return the scrambled eggs to the wok and gently fold them into the tomato sauce, breaking them into large curds, and warm through for 1 minute.

  7. Scatter with scallions and serve hot over the jasmine rice.
