How to cook it

  1. Peel the winter melon, scoop out the seeds, and cut the flesh into thin bite-size slices.

  2. Mix the ground pork with half the minced garlic, half the shallots, a pinch of salt, and the white pepper, and let it sit while you prep the rest.

  3. Heat the oil in a pot over medium heat and fry the remaining garlic and shallots until fragrant, about 1 minute.

  4. Pour in the water and bring to a boil.

  5. Pinch off small bits of the seasoned pork directly into the boiling broth so they cook into loose meatballs, skimming any foam that rises.
