How to cook it

  1. Rinse the rice and let it drain, then crush the grains lightly with the back of a spoon so they break down faster once simmered.

  2. Mix the ground pork with half the minced shallots, a pinch of salt, and the white pepper, and let it sit while the porridge cooks.

  3. Bring the water to a boil in a pot, add the rice and remaining shallots, and stir once.

  4. Reduce to a low simmer, partially cover, and cook, stirring occasionally so the bottom does not catch, until the rice has broken down into a thick, soupy porridge, about 25 minutes.

  5. Pinch off small bits of the seasoned pork directly into the simmering porridge so they cook into loose meatballs, skimming any foam that rises.

  6. Simmer 5 minutes more until the pork is fully cooked and the porridge is smooth.

  7. Season with the fish sauce and remaining salt, tasting and adjusting.

  8. Ladle into bowls, scatter with scallions, and serve hot.
