How to cook it

  1. Cut the chicken into bite-size pieces and slice the onion.

  2. Toss the chicken with the meat curry powder and salt, and marinate 15 minutes.

  3. Heat the oil in a wok over medium heat and fry the onion until softened, about 3 minutes.

  4. Add the fennel seeds and curry leaves and fry 1 minute until fragrant.

  5. Add the marinated chicken and fry over medium-high heat, stirring often, until browned, about 6 minutes.

  6. Add the water, cover, and simmer until the chicken is cooked through, about 10 minutes.

  7. Uncover, stir in the dark soy sauce, and cook over high heat, stirring constantly, until almost no gravy remains and the chicken is dry-fried and glossy, about 6 minutes.

  8. Serve hot alongside rice.
