Blend the dried red chilies, shallots, garlic, galangal, and cashews into a paste.

Heat the oil in a large pot and fry the paste with the curry powder, bruised lemongrass, and shrimp paste until fragrant and darkened, about 5 minutes.

Pour in the coconut milk and chicken broth and bring to a gentle simmer.
