  1. Heat the oven to 375 F. Slice the tops off the bell peppers, scoop out the seeds and ribs, and set the peppers upright in a baking dish.

  2. Heat the vegetable oil in a skillet and cook the onion and garlic over medium heat until softened, about 5 minutes.

  3. In a bowl, combine the ground beef, cooked rice, cooked onion and garlic, parsley, half the paprika, half the salt, and the pepper, and mix until just combined.

  4. Pack the filling into the peppers and set their tops back on.

  5. Stir the remaining paprika and the tomato paste into the crushed tomatoes, season with the remaining salt, and pour the sauce around and partly over the peppers in the dish.

  6. Cover with foil and bake for 40 to 45 minutes, until the peppers are tender and the filling is cooked through, then spoon the sauce over the top to serve; the 45-minute weeknight sibling of the slow-braised Kohlrouladen, and a different vegetable besides.
