  1. Preheat the oven to 400 F (200 C) and bring a large pot of salted water to a boil.

  2. Cook the cauliflower florets in the boiling water for 6 to 7 minutes, until just tender, then drain well and spread in a buttered baking dish.

  3. Melt the butter in a saucepan, whisk in the flour, and cook for 1 minute, then gradually whisk in the milk and simmer until the sauce thickens, about 5 minutes.

  4. Stir the nutmeg and half of the gruyere into the sauce, season with the salt and pepper, and pour it evenly over the cauliflower.

  5. Scatter the remaining gruyere on top and bake for 20 minutes, until bubbling and golden.

  6. Let the gratin rest for 5 minutes before serving; paired with a green salad it makes a complete light dinner on its own.
