  1. Preheat the oven to 400 F, rinse the sliced leeks well to remove any grit, and melt half the butter in a covered pot.

  2. Cook the leeks over low heat, stirring occasionally, until very soft but not browned, about 15 minutes.

  3. Meanwhile melt the remaining butter in a saucepan, whisk in the flour, and cook for 1 minute, then gradually whisk in the milk and simmer, stirring, until thickened, about 5 minutes; season with the nutmeg, salt, and pepper.

  4. Combine the leeks with half the bechamel and half the Gruyere in a buttered baking dish, then spread the remaining bechamel over the top and scatter on the remaining Gruyere.

  5. Bake for 20 minutes, until bubbling and golden.

  6. Let the gratin rest for 5 minutes; with a green salad alongside, it makes a complete meatless lunch or a light dinner on its own.
