How to cook it

  1. Trim the beef of fat and sinew and cut it into 2 cm cubes. Lean Gulasch from the leg, Wade or Keule, is the cut to ask for.

  2. Heat the oil in a large pot and brown the beef in two batches over a high heat, adding the onion for the last 2 minutes. Pour in the stock and bring it to the boil. A light stock is enough, about 2 teaspoons of Instantbruehe to the 1.2 litres, because the beef makes its own broth.

  3. Skim off the foam, cover and simmer gently for 50 minutes, until the beef is nearly tender.

  4. Cut the beans into 3 cm pieces and dice the carrot. Add them to the pot with the potatoes and the Bohnenkraut and simmer for another 25 minutes, until the potatoes are soft and the beans no longer squeak.

  5. Season with pepper, taste before adding any salt, and stir in the parsley. Like every Eintopf it is even better the next day.
