  1. Heat the oil in a large heavy pot and brown the beef in batches over medium-high heat, about 8 minutes total, then set it aside.

  2. Add the onions to the pot and cook over medium heat until deeply softened and golden, about 10 minutes, then add the garlic and cook for 1 minute more.

  3. Stir in the paprika, caraway seeds, and tomato paste and cook for 1 minute, then return the beef to the pot.

  4. Pour in the beef broth, add the bay leaves, bring to a simmer, cover, and cook over low heat for 45 minutes, stirring occasionally.

  5. Add the potatoes and simmer uncovered for 20 to 25 minutes more, until the beef and potatoes are both fork-tender.

  6. Season with the salt and pepper, remove the bay leaves, and ladle into deep bowls; this one-pot needs nothing else at the table.
