How to cook it

  1. Pat the fish dry and score it lightly on both sides.

  2. Heat the oil in a wide pan over medium-high heat and fry the fish 3 minutes per side, until golden, then remove.

  3. In the same oil, fry the ginger, garlic and dried chilies until fragrant, about 30 seconds.

  4. Return the fish to the pan, add both soy sauces, the sugar and the water, and bring to a simmer.

  5. Cover and cook 10 minutes, spooning the sauce over the fish occasionally, until it is cooked through and the sauce has reduced.

  6. Scatter with scallions and serve.
